Chicken Madras

Ingredients:

  • 1 Jar of Ally’s Tomato-Free Sauce
  • 2 large onions (chopped)
  • 5tsp madras powder/paste
  • 1tsp ground cumin
  • 2tsp garam masala
  • 500g Chicken Breast Fillets
  • 20ml Ghee (clarified butter) or vegetable oil
  • Chicken stock
  • Fresh coriander garnish
A delicious tomato-free chicken madras with all the trimmings.

Chicken madras instructions:

Add the chopped onion and ghee/oil to a pan. Cook on a medium heat until the onion has turned soft and is starting to brown.

Pour in the jar of Ally’s No Tomato Sauce, 100ml of chicken stock and the spices (cumin, garam masala, madras powder or paste) and bring to the boil.  Chop your chicken breast fillets into small pieces, and add to the sauce. Turn down the heat and simmer for approximately 35 minutes (ensure the chicken is well cooked) adding some more water or stock as required to prevent it from drying out, but not too much as you are going for a thick, rich curry sauce.

Serve with your favourite rice and Naan bread.  Garnish with fresh coriander.
